La VidA
La VidA está inspirada en el «Árbol de la vida», una obra del artista mendocino Sergio Roggerone que da la bienvenida en el restaurante parte de Susana Balbo Winemaker’s House & Spa Suites. Este árbol representa la esencia de la vid como símbolo de crecimiento y conexión, reflejo de los estadios vitales. Con sus siete elementos—raíces, flores, tallo, ramas, frutos, pájaros y parásitos—se convierte en la brújula que guía la cocina de Flavia Amad.
Roots are the sustenance of tradition, while the flowers allude to the freshness of transformation. The stem and branches symbolise growth and evolution, leading people towards the fullness of fruit. The birds, in their flight, tell of freedom and transcendence, while the parasites, far from being negative, invite us to think about the complexities of existence.
Flavia's philosophy promotes gastronomy that nourishes both body and soul. This fine dining restaurant offers flavours and textures that connect with the human experience.

Osadía de Crear
For Flavia Amad, Osadía de Crear is the manifestation of a bold vision, a space where gastronomy meets the wines of one of Argentina's best winemakers, Susana Balbo. Here, the two come together to achieve balance and create with great respect for the land and excellence. Innovation, courage, quality and authenticity are the four pillars that support this proposal, and they reflect the spirit of a restaurant that seeks to redefine the experience.
Osadía's cuisine follows the rhythm of the seasons, embracing what nature provides at its best. Flavia builds a story with her sensibility and experiences; some recipes link her to her childhood, others to the Balbo family and the love of wine. Thus, the menus change cyclically, inviting the diner to be part of the environment. The wines, the main characters, dialogue with the flavours, elevating every dish.
What makes the Balbo winery's restaurant stand out is its ability to break with convention without losing the essence. Flavia, always disruptive, she creates from her intuition, aiming to surprise without being strident, with the balance between sophistication and intimacy. Al Mando
Cocineras ‘Al Mando’ is a culinary project that was born out of the desire to break down stereotypes in a culinary world historically male-dominated. Created by Flavia Amad, Ana Lovaglio and Picky Courtois, this cycle is held at the Osadía de Crear restaurant, at the heart of Susana Balbo Wines. The initiative seeks to give visibility to women in gastronomy, celebrating their talent and creativity.
The genesis of this project is framed by the personal experience of Flavia, who, having returned to Mendoza after living in the United States, found a mixed picture. Although she had enjoyed recognition and opportunities abroad, when she arrived in her homeland, she noticed that the only woman in the kitchen was one or two. This reality motivated her today to create a space where women could shine and be celebrated.
Al Mando has become a series of gatherings where chefs, sommeliers and winemakers come together to share their art, passion and stories. Every edition is a tribute to female talent. All participating chefs contribute their own vision, creating a space for learning and growth. Through these collaborations we hope to elevate local gastronomy and inspire future generations of women who dream to have a place in this industry.
